30 Days In The Jungle is a snapshot in time from an unsuspecting classically-trained Chef who found herself marooned on the Big Island of Hawaii at an off-grid, plant-based meditation retreat. Each of these tried and true recipes were tested in the Hawaiian jungle and were carefully selected to represent the life-changing experience of a Mainlander learning the culture and cuisine of Hawaii. Each of these recipes was inspired by living under the stars with coqui frogs and geckos and meal planning through harvesting food within the wild orchards. These recipes served over 700 meals during the course of 30 days, all of them prepared with the spirit of Aloha. Whether you're part-time plant based or a lifelong vegan, these recipes were designed for ease of prep as well as healthy fuel for your body and nourishment for your spirit.
